Chicken Adobo

Here's a traditional Filipino dish to try at home.

Ingredients:
2 tbsp. oil
3 lb. frying chicken cut into 2 inch pieces
2 bay leaves
3 garlic cloves, minced
1/2 tsp. black pepper
1 small onion, sliced
1/2 cup rice vinegar
1/4 cup soy sauce
2 tbsp. brown sugar, optional

Optional: May add 1 lb. pork, cut into 2" pieces

Preparation:

Heat saucepan, add oil. Add chicken, bay leaves and garlic. Sauté chicken for approximately 5 minutes or until light brown. Remove excess oil. Add all remaining ingredients, cover, bring to a boil; reduce to simmer for 20 minutes. Stir chicken to cook evenly in the sauce. Serve with hot steamed rice.

Mango Bread

Here's an excellent dessert to try.

Ingredients:
2 Cups flour
2 Tsp. Baking soda
1/2 - 1 Tsp. salt
1 Cup sugar
1 Tsp. cinnamon
1/2 Cup raisins
3/4 Cup vegetable oil
3 eggs, Beaten
2 chopped ripe mangos
1 Tsp. vanilla extract

Preparation:

Mix all ingredients well. Pour into greased pan. Bake at 325 degrees F. for one hour. Cool for 20 minutes.

Potato Macaroni Salad

Here's an excellent dessert to try.

Ingredients:
4-5 large potatoes
1 Cup shell macaroni-dry
1-2 carrots chopped
2 celery stalks chopped
2-3 sweet pickles to taste chopped
1 Cup frozen peas
2 stalks green onion chopped
2 hard boiled eggs chopped
1/4 Tsp. salt to taste
1/4 Tsp. pepper to taste

Dressing:
1-1/4 Cup mayonnaise
1/2 Cup Zesty Italian dressing
2 Tbsp. pickle juice
1/4 Tsp. powdered mustard Herbs to taste (dill, rosemary, parsley)

Preparation:

Boil potatoes until tender (skinning is optional). Allow potatoes to cool then cut into cubes. Cook then drain the macaroni according to the directions on the macaroni package. While the macaroni is cooking mix the dressing in a small bowl and set aside. Lightly toss the cooked & drained macaroni, cooked & sliced potatoes, and the remaining ingredients. Once tossed mix in dressing.

Macadamia Nut Cream Pie

Here's an excellent dessert to try.

Ingredients:
1 1/3 Cups milk
3/4 Cup sugar
1/2 Cup chopped macadamia nuts
1/4 Tsp. salt
1 Tsp. vanilla
1 egg
5 Tsp. cornstarch
2 egg whites
1 – 9” baking pie shell
1 Cup heavy cream, whipped

Preparation:

In a saucepan, combine 1 cup of the milk, 1/4 cup of the sugar, 1/4 cup of the nuts, the salt and the vanilla; scald. Mix the remaining 1/3 cup milk with egg and cornstarch. Thoroughly stir some of hot mixture into egg mixture; return all to saucepan. Cook 5 more minutes, stirring constantly, until mixture thickens. Cool for 1 hour. Beat egg whites until soft peaks form; fold carefully into cooled mixture. Pour into pie shell; chill. Before serving, top with sweetened whipped cream and remaining 1/4 cup nuts.

Lomi Lomi Salmon

Here's an excellent fish entree.

Ingredients:
1 1/2 lb salmon fillets
kosher salt
5 large ripe tomatoes
1 medium onion
1 green onion
3/4 tbsp. lime juice
1 tsp. pepper
1 tsp. sugar

Preparation:

Salt both sides of salmon fillets and place in refrigerator overnight. The next day, wash off salt and dice salmon into small pieces. Cut tomatoes, onions, and green onions into little cubes. Combine all ingredients and chill.

Malasadas

Here's an excellent island style dessert recipe. Malasadas are always a great treat for the summer.

Ingredients:
1 pkg. Active dry yeast
1 Tbsp. Sugar
1/3 Cup Warm water
8 Cups Flour
1/2 Cup Sugar
1 Tsp. Salt
2 Cups Milk, scalded
1/2 Cup Butter or margarine, melted
8 Eggs, beaten
2 Tbsp. Oil

Preparation:

Dissolve yeast and the 1 Tbsp. sugar in water. Let rise until doubled. In large mixing bowl, combine flour, sugar, and salt and make a well in the center. Add milk, butter, eggs, and yeast mixture. Beat thoroughly to form a soft, smooth dough. Cover and let rise until doubled. Heat deep fat to 350 Degrees F. Spoon teaspoons of dough into oil and fry until browned. Drain on absorbent paper, and then shake in a bag with sugar.

Huli Huli Chicken

Here's an excellent island style chicken recipe just in time for the July 4th holiday.

Ingredients: 3 broken fryers, split or quartered
1/4 Cup Ketchup
1/4 Cup shoyu
1/2 Cup chicken broth
1/3 Cup white wine
1/4 Cup frozen pineapple juice concentrate.
½ Tsp. fresh or dried ginger.
½ Tsp. Worcestershire sauce.

Mix ingredients in bowl, brush over washed chicken splits. Grill over barbecue, turning and basting with sauce until it is done (about 40 minutes).

Mochiko Chicken

Here's an excellent island style chicken dish. Mochiko Chicken always makes the taste buds happy.

Ingredients: 4 lbs. boneless chicken breasts or 5 lbs. chicken thighs (deboned)
4 Tbsp. flour
4 Tbsp. cornstarch
4 Tbsp. sugar
5 Tbsp. shoyu
5 cloves of garlic, crushed and minced
8 Tbsp. Mochiko flour
4 Tsp. salt
4 stalks green onion, finely chopped
4 eggs
4 Tbsp. oyster sauce

Cut chicken into serving size pieces and set aside. In a large container combine all ingredients except the chicken and combine well. Once the batter is mixed add the chicken and stir until all pieces are coated well. Cover and let set in the batter overnight in the refrigerator. The next day stir the batter and put it back in the refrigerator until ready to cook. 10 mins. prior to cooking take the container out of the refrigerator. Fill a frying pan with enough oil to cover the chicken pieces and heat. Wait for the oil to be hot enough to fry the batter. Deep fry the mochiko batter chicken until golden brown. Let the cooked chicken drain on wire rack and serve. Serves six.

Haupia

Here's a classic Hawaiian dessert recipe. Haupia is perfect treat for summer:

1 3/4 cups frozen coconut milk
5 tablespoons sugar
5 tablespoons cornstarch
3/4 cup water

Thaw the frozen coconut milk over low heat. Mix the sugar and cornstarch together, then stir in water. Stir mixture into coconut milk and cook over low heat, stirring constantly, until thickened. Pour the mixture into an 8 inch square pan. Let haupia cool until firm, then eat. This recipe makes approximately six servings.

Oven Kalua Pig

Here's a great way to get Kalua Pig without having to dig a pit in your backyard. You'll need the following ingredient:
4 pounds pork butt
1 tablespoon garlic powder
2 tablespoons Hawaiian salt
3 1/2 ounces liquid smoke flavoring
5 1/2 cups water
1 pound pork skin
8 ti leaves

Cut several deep slashes in the pork butt, then rub the pork butt with garlic powder and 1 tablespoon salt. Pour 3 1/2 oz of liquid smoke onto the pork butt. Remove the fat from the pork skin. Add 1 1/2 cup of water to roasting pan, then line with foil. Lay four of the ti leaves on foil, then place pork and skin on the leaves and cover with remaining ti leaves. Cover the roasting pan tightly with foil, and roast at 400 degrees for 1 hour, 375 degrees and cook for 4-1/2 hours more or until pork is easy to shred. Bring 4 cups of water to a boil in a large sauce pot, add salt, shred pork and skin. Add the boiling water to the roasting pan, recover with foil, and cook for 15 minutes.
